Extract, Bergamot

The bartender pointed to the bergamot trees in the hotel courtyard when we asked about the secret ingredient in his gin fizz. The essential flavor in Earl Grey tea and Turkish delight, bergamot extract is extracted from a greenish-yellow, sour-bitter citrus fruit related to the orange. It's a great accent in tea cakes, marmalades, and shortbread.
